Every home has its version of mango pickle. This bundle brings together Mithila’s three classic styles—so you can build your mango combo based on what your palate craves: sharp spice, khatta heat, or sweet-sour comfort.

Made from Malda, Kalkatiya, Bijju & Sukul mangoes, all grown in the orchards of Darbhanga, these pickles represent generations of flavor wisdom. From the soaking sun to the smoking stoves, this is achaar that carries the air of Mithila.



Mithila Special Mango Pickle – The Classic Aam Achaar

Ingredients: Raw Mango, Mustard Oil, Turmeric, Red Chilli Powder, Coriander Powder, Cumin, Nigella Seeds, Carom Seeds, Fenugreek, Fennel Seeds, Yellow Mustard, Black Cumin, Asafoetida, Salt, Black Salt.

Preparation:

Freshly plucked mangoes arrive at dawn and are sorted, cut, washed, and sun-dried. Then begins the marination in salt and turmeric for 24 hours. Roasted spices and mustard oil are mixed in and the batch is sun-dried for 8–10 days before storage.

Pairing: Dal-Chawal, Khichdi, Poha, Poori-Bhujia, Paratha


Kuccha Mango Pickle – The Grated, Khatta King

Ingredients: Raw Mango, Mustard Oil, Turmeric, Red Chilli Powder, Coriander Powder, Cumin, Nigella Seeds, Carom Seeds, Fenugreek, Fennel Seeds, Yellow Mustard, Asafoetida, Black Salt, Salt.

Preparation:
Mangoes are peeled, grated, and left to release their moisture. Salt and turmeric are left to rest for 24 hours. Then comes a custom masala blend with mustard oil. The mixture is sun-dried for 7–10 days till perfectly khatta.

Pairing: Khichdi, Jhaal Muri, Chawal-Roti, Dahi-Choora


Khatt-Meethi Mango Pickle – The Sweet Surprise

Ingredients: Raw Mango, Sugar, Red Chilli Powder, Cumin, Fennel Seeds, Carom Seeds, Nigella Seeds, Fenugreek, Cardamom, Cloves, Pepper, Salt

Preparation:
Peeled and salted raw mangoes are mixed with sugar and left to sit. As the mix becomes syrupy, it is slow-cooked with spices for 30 minutes till soft and sticky. Stored in pre-sanitized martabaans after deep drying and heating.

Pairing: Samosa, Matri, Poori, Evening Snacks
