🌶 Lal Mirch Bharua Achaar – Stuffed Red Chilli Pickle

Ingredients: Red chilli, mustard seeds, coriander powder, cumin, fenugreek, amchoor, black salt, mustard oil, turmeric, nigella seeds


Preparation:

Red chillies are hand-selected, deseeded, and filled with roasted masala made from mustard and spices. Each chilli is hand-stuffed, then slow-dried under the sun for over a week.

Pairing: Perfect with paratha, dal-chawal, or dahi-choora.


🍈 Kathal ka Achaar – Jackfruit Pickle

Ingredients: Raw jackfruit, mustard oil, cumin, carom seeds, nigella, fennel, asafoetida, turmeric, amchoor, red chilli powder, salt

Preparation:
Raw kathal is cut, steamed, and marinated with turmeric and salt for 48 hours. Then it’s spiced and sun-dried for 10 days, making each piece soft, tangy, and deeply flavorful.


Pairing: Best with khichdi, poori, or litti.


🌾 Oal Achaar – Elephant Foot Yam Pickle

Ingredients: Raw jackfruit, mustard oil, cumin, carom seeds, nigella, fennel, asafoetida, turmeric, amchoor, red chilli powder, salt


Preparation:
Grated oal, ginger, and chilli are mixed in equal parts and marinated. After adding masala, the pickle is sun-dried until the flavor matures into a gingery, bold punch.


Pairing: Tastes amazing with roti, dal-chawal, or poori-bhaji.


Karonda Chilli Pickle

Ingredients: Karonda, Ginger, Green Chilli, Lemon Juice, Mustard Oil, Turmeric, Red Chilli Powder, Coriander Powder, Cumin, Nigella Seeds, Carrom Seeds, Fenugreek, Fennel, Yellow Mustard, Black Salt, Salt, and Amchoor.

Preparation:
Crunchy karondas, zesty ginger, and green chillies are marinated in mustard oil with a bold masala blend. Sun-cured for that chatpata tang and classic Bihari bite—perfect with pooris and parathas.

Pairing: Best with aalu-dum, poori, or evening chai snacks.
